Sweet Potato Jacket Potatoes with Beef & Cheese

Ingredients

  • 2 large sweet potatoes
  • 500g minced beef
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste
  • Dried oregano, to taste
  • Small pinch of chilli powder
  • 2 tbsp tomato purée
  • 500ml passata
  • 60g reduced-fat cheddar cheese, grated

Instructions

  1. Preheat the oven to 200°C / 180°C fan.
  2. Wrap each sweet potato tightly in aluminium foil.
  3. Bake the sweet potatoes for 1 hour 45 minutes until soft.
  4. Brown the minced beef in a large saucepan over a medium-high heat.
  5. Season the beef with salt, black pepper, garlic powder, paprika, oregano and a small pinch of chilli powder.
  6. Stir in the tomato purée and cook for 2–3 minutes.
  7. Pour in the passata.
  8. Simmer the sauce for 12 minutes.
  9. Remove the sweet potatoes from the oven and carefully unwrap them.
  10. Slice each sweet potato open down the centre.
  11. Spoon the beef mixture into the sweet potatoes.
  12. Sprinkle the grated cheese evenly over the top.
  13. Serve immediately.

Storage

  • Fridge: Up to 3 days in an airtight container.
  • Freezer: Up to 3 months. Thaw overnight in the fridge and reheat until piping hot.
