Ingredients
- 2 large sweet potatoes
- 500g minced beef
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- Paprika, to taste
- Dried oregano, to taste
- Small pinch of chilli powder
- 2 tbsp tomato purée
- 500ml passata
- 60g reduced-fat cheddar cheese, grated
Instructions
- Preheat the oven to 200°C / 180°C fan.
- Wrap each sweet potato tightly in aluminium foil.
- Bake the sweet potatoes for 1 hour 45 minutes until soft.
- Brown the minced beef in a large saucepan over a medium-high heat.
- Season the beef with salt, black pepper, garlic powder, paprika, oregano and a small pinch of chilli powder.
- Stir in the tomato purée and cook for 2–3 minutes.
- Pour in the passata.
- Simmer the sauce for 12 minutes.
- Remove the sweet potatoes from the oven and carefully unwrap them.
- Slice each sweet potato open down the centre.
- Spoon the beef mixture into the sweet potatoes.
- Sprinkle the grated cheese evenly over the top.
- Serve immediately.
Storage
- Fridge: Up to 3 days in an airtight container.
- Freezer: Up to 3 months. Thaw overnight in the fridge and reheat until piping hot.
