Cheesy Mince Pasta

Equipment

  • Medium saucepan
  • Wooden spoon
  • Chopping board
  • Sharp knife
  • Colander
  • Measuring jug

Ingredients

  • 500g minced pork or beef
  • 300g dried pasta (spirali or similar)
  • 500g passata
  • 300ml beef stock
  • 1 onion, diced
  • 3 carrots, diced
  • 2 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 100g reduced-fat cheese, grated
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Dice the onion and carrots.
  2. Heat the olive oil in a large saucepan over a medium heat.
  3. Fry the onion until lightly browned.
  4. Add the carrots and cook for 3 minutes.
  5. Add the minced meat and cook until browned.
  6. Add the paprika, chilli powder, garlic powder, salt, and black pepper.
  7. Cook the spices for 1 minute until aromatic.
  8. Stir in the tomato purée.
  9. Cook the tomato purée for 2 minutes.
  10. Add the passata, beef stock, and Worcestershire sauce.
  11. Stir well and scrape any browned bits from the bottom of the pan.
  12. Simmer the sauce on a low heat for 20 minutes.
  13. Boil the pasta in a separate saucepan according to the packet instructions.
  14. Drain the pasta.
  15. Add the cooked pasta to the sauce.
  16. Stir until the pasta is evenly coated.
  17. Add the grated cheese.
  18. Stir until the cheese has melted into the sauce.
  19. Divide into meal prep containers or serve immediately.

Storage

  • Fridge: 4 days in an airtight container.
  • Freezer: 3 months. Thaw overnight in the fridge and reheat until piping hot.
