Ingredients
- 150g butter
- 3 tablespoons caster sugar
- 3 tablespoons golden syrup
- 6 teaspoons cocoa powder
- 225g digestive biscuits, crushed
- 100g milk chocolate, chopped
- 150g dark chocolate, chopped
Instructions
- Grease a baking tin (20cm x 20cm) and line with parchment paper.
- In a saucepan, bring water to a simmer and place a heatproof bowl on top.
- Melt the butter, caster sugar, golden syrup, and cocoa powder together in the bowl, stirring until smooth.
- In a large mixing bowl, combine the crushed digestive biscuits with the melted chocolate mixture.
- Transfer the mixture into the prepared baking tin, pressing down firmly to create an even layer.
- In the heatproof bowl, melt the milk and dark chocolate together until smooth.
- Pour the melted chocolate over the biscuit base, spreading evenly.
- Leave to cool for 30 minutes at room temperature, then refrigerate for at least 2 hours until set. For best results, leave overnight.
- Once set, remove from the tin and cut into 16 squares.
Tips
- Use a mix of milk and dark chocolate for a richer taste
- Leave to refrigerate overnight for the tiffin to set completely
- Use a double boiler to melt ingredients gently and avoid burning
