Ingredients
- 120g butter, softened
- 75g dark brown sugar
- 75g caster sugar
- 1 egg
- 1 teaspoon vanilla extract
- 180g plain flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 100g chocolate chips
Instructions
- Preheat oven to 180°C (160°C fan), and line two baking trays with parchment paper.
- With a mixer, cream together the softened butter, dark brown sugar, and caster sugar until light and fluffy.
- Add in the egg and vanilla extract to the creamed butter and sugar, continue mixing until well combined.
- Once combined, sift in the plain flour, baking soda and chocolate chips, mixing with a spatula until combined.
- Add the salt and mix.
- Divide the mixture into 10 equal balls, rolling each in your hands.
- Place 5 balls on each baking tray, leaving space between them to allow for spreading.
- Bake for 12 minutes or until the edges are golden brown but the centers are still soft.
- Leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
- For best results, allow the cookies to rest for at least 30 minutes before serving.
Tips
- Use an eletric whisk for a lighter texture and easier mixing
- Don't overcook - the cookies will continue to firm up as they cool
- Ensure to mix the chocolate chips evenly throughout the dough
