Ingredients

  • 120g butter, softened
  • 75g dark brown sugar
  • 75g caster sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 180g plain flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 100g chocolate chips

Instructions

  1. Preheat oven to 180°C (160°C fan), and line two baking trays with parchment paper.
  2. With a mixer, cream together the softened butter, dark brown sugar, and caster sugar until light and fluffy.
  3. Add in the egg and vanilla extract to the creamed butter and sugar, continue mixing until well combined.
  4. Once combined, sift in the plain flour, baking soda and chocolate chips, mixing with a spatula until combined.
  5. Add the salt and mix.
  6. Divide the mixture into 10 equal balls, rolling each in your hands.
  7. Place 5 balls on each baking tray, leaving space between them to allow for spreading.
  8. Bake for 12 minutes or until the edges are golden brown but the centers are still soft.
  9. Leave to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
  10. For best results, allow the cookies to rest for at least 30 minutes before serving.

Tips

  • Use an eletric whisk for a lighter texture and easier mixing
  • Don't overcook - the cookies will continue to firm up as they cool
  • Ensure to mix the chocolate chips evenly throughout the dough
